Pachyrrhizus erosus (Mexican Yam Bean)

3 (7)m, Mexican Yam Bean, Jicama or Mexican Turnip has a tasty, sweet and crispy tuber with a white to ivory flesh. The tuber is pealed and either used raw in salads and soups or baked, fried and cooked.
